A colorful and satisfying way to end off a meal, particularly now that we have such gorgeous summer fruits available. The almond crust on the cheese elevates the dish to super-special and takes almost no time at all.

1 Brie Cheese
100 g Raw Almonds (skin on)
100 g Sugar
To serve: Assorted summer fruits, washed and sliced (best are soft deciduous fruits and berries!)
Place cheese on grease-proof paper; arrange almonds in an attractive pattern on top of the cheese, reserving any extras (this will depend on size of cheese you are using).
In a small saucepan, melt the sugar and allow it to become a golden-brown color as it caramelizes.
Do not stir.
Pour caramelized sugar over the nuts and cheese; it will harden as it cools.
To serve, place cheese on a large platter and arrange fruit around it.
