Banting Sunflower Seed Hot Cross Buns

Super Banting Hot Cross Buns that taste just like the traditional buns you are used to! Compliments of Natalie Lawson and the Banting 7 Day Meal Plan Facebook Group.

Ingredients

200g sunflower seed flour

2 tsp baking powder

5 tbs psyllium husk

2 tbs sweetener

2 tbs mixed spice

2 tsp cinnamon

1 lemon or orange zested

2.5 tbsp apple cider vinegar

3 egg whites

500ml boiling water

Butter to grease

For the crosses:

1 egg white

1 tsp sweetener

1/2 tbs coconut flour

For the glaze:

Water

Sweetener

Directions

1Preheat oven to 180C.

2Mix dry ingredients together (incl peel).

3Add egg white mixed with apple cider vinegar until it is well combined.

4Add boiled water but do not over mix.

5Divide into 4.

6Dampen hands, and form dough into balls and place in well greased loaf pan.

7Pipe crosses on top and bake in oven for 1 hour.

8Once cooled, using pastry brush, paint glaze on top of hot cross buns.
