The Truffle Journal (Melissa Delport) took a quick visit to Food Lover's Market for some seasonal ingredients for a delish Spring dish & to show us how easy it is to build your own wholesome bowl! She created this Colourful, Fresh, and Wholesome Spring Quinoa salad, packed with nutrients and simple to put together! Build your own bowl any day of the week by adjusting this recipe, all you need is: 1. The Greens 2. The Grain 3. The Fresh Veg/Fruit 4. Drizzle of Dressing

Ingredients

1 cup quinoa
3 celery stalks, thinly sliced
2 red apples, thinly sliced,
3 small beetroots, raw and thinly sliced
1 handful rocket
1 lemon
Olive oil
Edible flowers to decorate
Salt and Pepper

Directions

In a medium pot cook the quinoa as per packet instructions. Once ready keep it in the pot with the lid on to steam and get fluffy. Meanwhile, thinly slice the celery, beetroot, and apples
Add a squeeze of lemon to the apples to prevent the apples from going brown
Assemble the salad by adding rocket, quinoa, celery, apples, and beetroot. Season the salad and toss well.
Dress with the juice of 1/2 a lemon and a good glug of Olive oil.
Decorate with edible flowers and serve!
