FLM Bacon Potato Bake Recipe

Enjoy this creamy, cheesy potato bake, as an accompaniment to almost any other dish, or even as a meal all on its own. Who can resist this kind of comfort food? Here we have notched it up, by adding a bit of texture, with salty pieces of crispy bacon and caramelised onions for a hint of sweetness.

6 large potatoes washed and cut into thin slices

200 g bacon, diced

2 med onions, peeled and thinly sliced

3 tbsp sugar

1 tbsp Olive oil

3 cloves garlic, crushed

400 g cheddar cheese, grated

2 tbsp fresh thyme leaves, chopped

250 ml pouring cream

150 ml sour cream

Freshly ground salt and pepper


1Heat a non stick frying pan and add the diced bacon.

2Saute the bacon until just crispy. Remove it from the pan and set aside.

3Heat olive oil in the same pan, then add the sliced onion, sugar and garlic.

4Fry over a gentle heat until the onions are tender and caramelised. Remove it from the heat and set aside.

5Oil a casserole dish or oven proof pan.

6Layer with slices of potato, season with freshly ground salt and pepper as well as a sprinkling of fresh thyme.

7Continue layering, with caramelised onion, bacon and a handful or two of grated cheese.

8Repeat this process twice, ending with a layer of grated cheese.

9Mix the cream and sour cream together in a jug.

10Pour this evenly over the potato dish.

11Cover loosely with tin foil and place in a pre heated, 200 C oven.

12Bake for 40-45 mins covered, then remove the tin foil and bake for a further 20-25 mins.
