Cheesy Sweetcorn and Bacon Bread
Cheese, Corn & Bacon - this quick bread is flop-proof and a must-have to take along to a braai! Serve it with butter, and you'll be left with a clean dish.

Notes*Remove the bacon if you are vegetarian and add some crispy onion to some texture.
625 ml (2 1/2 cups) cake flour
10 ml (2 tsp) baking powder
15 ml (1 Tbsp) Food Lover’s sugar
5 ml (1 tsp) salt
4 large eggs
125 m (1/2 cup) butter, melted
250 ml (1 cup) buttermilk
250 g Food Lover’s bacon, diced
250 ml (1 cup) Food Lover’s cheddar cheese, grated
1 tin Food Lover’s Signature sweetcorn kernels
1/2 tin Food Lover’s Signature cream style sweetcorn
Preheat oven to 180°C.
Grease a 1 x 30 cm loaf tin
Fry the chopped bacon in a pan over high heat until it is crispy. Once cooked, set aside to drain on paper towel.
In a mixing bowl, sift together all the dry ingredients. In a separate bowl, beat the eggs, melted butter, and buttermilk.
Pour this mixture into the bowl with the dry ingredients and mix well. Add the corn, creamed sweetcorn, bacon pieces, and grated cheese. Gently mix these ingredients into the batter.
Pour the mixture into a greased loaf tin. Bake for approx 1hr 15 mins until it is golden brown. Insert a skewer into the centre of the loaf and if it comes out clean, the bread is ready. Remove it from the oven and allow it to cool before removing it from the tin.
