Zesty Chilli and Herb-crusted Yellowtail

A tasty yellowtail recipe, that is so quick to prepare! Simply blitz up all the flavours, top and bake. A healthy and SASSI green list, sustainable choice.

1Preheat the oven to 180°C and line a baking tray with foil.
2In a food processor, place all the ingredients for the zesty chilli herb crust and season to taste.
3Pulse until you have a roughly chopped herb mixture.
4Set aside until needed.
5Place the yellowtail fillet on the prepared baking tray, brush with olive oil and season to taste.
6Spread the herb mixture over the fish and bake for about 20-25 minutes, or until the fish is cooked.
7Serve with sliced green olives and lemon wedges.
