Chocolate Avocado Tart

If cauliflower can become pizza, and black beans can become brownies, then avocado can become a tart right!?

Chocolate and Avocado actually make a really great pair, try it before you turn your nose up. Avocado is a high fat, and you can use it as a healthier alternative fat in baking too. We’ve also made avocado brownies and an avocado chocolate mousse…so we know the combo works! Make this, and once your guests tell you it’s delicious…let them know it’s made out of avos.

Ingredients

For the crust:

  • 500ml (2 cups) fine chocolate cookie crumbs (vegan cookies, for a vegan option)
  • 80g butter, melted and cooled (or coconut oil for a vegan option)

For the filling:

  • 4 ripe avocados
  • 125ml (1/2 cup) cocoa powder or cacao powder
  • 160g dark chocolate, melted
  • 80ml (1/3 cup) coconut milk
  • 60ml (1/4 cup) honey / maple syrup
  • 10ml (2 tsp) vanilla paste
  • Pinch of salt
  • Fresh raspberries or seasonal fruit, to garnish

Directions

For the crust:

  1. Spray a 25cm fluted tart tin or alternatively a cake tin with non-stick cooking spray.
  2. Combine the cookie crumbs with the butter or coconut oil, mix well and press tightly into the tart tin. Place the tart crust into the fridge while you prepare the filling.
  3. For the filling:

    1. Place all ingredients into a blender and blend until you have a smooth texture. Place the filling into the tart tin and set in the fridge for about 2 hours. Serve with fresh raspberries or any seasonal fruit.
    2. Once you start serving the tart, do not leave it out of the fridge for long periods of time because it will begin to soften or melt.

Notes

To make this tart vegan replace the butter in the crust with coconut oil and the honey with maple syrup.

Do you want to make this a healthier and/or Gluten-free chocolate avocado tart?

Replace the choc chip cookies in the base with gluten-free cookies, or use rolled oats, or use almond flour instead of cookies and add a touch of honey or coconut sugar.
