Ingredients

  • Oil for deep frying
  • 2 onions, cut into rings
  • 250ml (1 cup) flour
  • 5ml (1 tsp) baking powder
  • 5ml (1 tsp) salt
  • 250ml (1 cup) water
  • Lime wedges, to serve
  • Parsley, to serve
  • Salt and pepper, to taste

Directions

    Heat the oil for deep frying in a large pot over moderate heat.
    Mix together the flour, baking powder, salt and water to make a thick batter.
    Dip the onion rings in the batter and fry for about 5-8 minutes per batch.
    Drain on kitchen towel and season to taste.
