Fruity Salsa

The colours of this salsa add a pop to any dish! A fruity, fresh salsa to add zest and balance to your BBQ dishes like ribs or sticky wings. A great topper for crostinis too.

Fruity, zesty salsa is perfect served with BBQ pork ribs, or sticky chicken wings. The tart, firm flavour cuts through the sweet sticky BBQ to add perfect balance.

Ingredients

    ½ large pineapple
    1 pomegranate
    2 spring onions
    Handful coriander
    Zest and juice of 1 lime
    15ml (1 Tbsp) olive oil
    Salt and pepper, to taste

Directions

    Peel the pineapple and cut into small dice.
    Remove the pomegranate rubies from its skin.
    Thinly slice the spring onions and chop the coriander.
    Mix all together.
    Add the lime zest and juice, as well as the olive oil.
    Season to taste.
