Garlic and Chilli Cheese Braai Baguette

For the garlic and basil butter:

  • 60ml (1/4 cup) butter, softened
  • 30ml (1 Tbsp) basil pesto
  • Zest of 1 lemon
  • 2 garlic cloves, grated
  • Salt and pepper, to taste

To assemble:

  • 1 x Food Lover’s Market French loaf (35cm)
  • 60ml (1/4 cup) Food Lover’s sweet chilli sauce
  • 125ml (½ cup) Food Lover’s mozzarella, finely grated


For the garlic and basil butter:

  1. Combine all ingredients and season with salt and pepper.
  2. To assemble:

    1. Pre-heat oven to 180°C.
    2. Slice the French loaf diagonally about 2cm apart without cutting right through. Spread the garlic and basil butter in all the slices on both sides, then top with sweet chilli sauce and stud the slices with mozzarella.
    3. Wrap the loaf in tin foil and bake in the oven for 10-12 minutes, or until slightly browned and the cheese has melted.
