This sauce takes only minutes to prepare and is just the thing for cooler evenings. Being very rich and decadent, it needs only a very simple accompaniment; we used our favourite La Molisana brand of gnocchi as we love the texture with the creamy cheese sauce.Bellisimo!
(PS - The cheese sauce is equally delicious with a steak, or over steamed broccoli. In fact, it complements just about anything!)

Yields: 6 servings
Smoky 3-Cheese Sauce
50 gCheddar Cheese, grated
100 gDanish White, crumbled
50 gGrana Padano, grated
2 1/2 mlSmoked Paprika
10 mlFresh Parsley, chopped
Salt, to taste
La Molisana Gnocchi Patate (Depending on appetite size and number of people, 2 or 3 packets)
1In a saucepan on medium heat, melt butter and add flour; mix to make a paste.
2Add milk, a little at a time, stirring constantly to remove any lumps. Once you have a smooth consistency, add the cheeses, spice and parsley.
3Continue stirring, until all cheese has melted and the sauce is smooth and creamy. Do not allow sauce to boil as it will burn and spoil the flavour.
4Serve with gnocchi or any other pasta you desire.
