Notes*Do not overcook the trout. The flesh will flake easily when perfectly cooked. Rememeber it still cooks a little once taken off the heat.
1 Lemon, sliced
1 Orange, sliced
1 Red Onion, sliced
Fresh Ginger Root, peeled & sliced
Handfull Sesame Seeds
6 Sprigs Thyme
Coarse Sea Salt
Pepper, to season
Rub the trout skin with coarse sea salt and let sit for about 10 minutes
Score the skin
Fill the cavity of the trout with half the lemon slices, half the orange slices, half the thyme, ginger and red onion.
Place the trout on a dish and drizzle with Olive Oil. Add the remainder of the orange & lemon slices, thyme, ginger and red onion. Top with Sesame Seeds.
Turn the pre-heated grill down to low heat.
Grill the trout in the oven or on the Weber for 6-7 minutes per side, until the skin is browned and flesh flakes easily.
