Lemon & Herb Chicken Sosatie Platter

Chicken Sosaties

    8 Food Lover's Market boneless, skinless chicken thigh sosaties
    1 1/2 tbsp Food Lover's Market olive oil blend
    3 tbsp Food Lover's Market lemon juice
    1 tsp Food Lover's Market crushed garlic
    2 tsp fresh thyme, roughly chopped
    1/2 tsp Food Lover's Market freshly ground pepper
    1/2 tsp Food Lover's Market salt


    2 cups Couscous
    4 cups boiling water
    3 tbsp ood Lover's Market Extra Virgin olive oil
    2 rounds of Roulou black pepper feta cheese, crumbled
    1 tsp Food Lover's Market dried chilli flakes
    1 large handful of mint, torn
    Food Lover's Market freshly ground salt and pepper


    1 cup Clover smooth classic yoghurt
    1/2 cup grated cucumber
    1 1/2 tsp Food Lover's Market lemon juice
    1 1/2 tsp Food Lover's Market crushed garlic
    1/4 tsp Food Lover's Market freshly ground salt


Chicken Sosaties

    In a baking tray , mix together all the ingredients .
    Add the chicken sosaties to the tray and make sure that they are completely covered with the marinade.
    Set aside while preparing the couscous.
    Heat a griddle pan and place the marinated sosaties in the pan, in batches of four.
    Cook them on each side for 5-6 minutes.


    Place the couscous in a large bowl.
    Pour the boiling water over, until the couscous is just covered, then drizzle with the olive oil.
    Place cling wrap tightly over the bowl and set aside, until the water has been absorbed.
    Remove the cling wrap and using a fork, fluff the couscous to break up any lumps. Add the chilli flakes and season with salt and pepper.
    Toss through the crumbled feta and torn mint leaves.
    If the couscous appears a bit dry, add some more olive oil.


    Place the grated cucumber in a mesh strainer over a small bowl.
    Sprinkle with the salt and let it sit for 10 minutes.
    Push as much of the water out of it as possible.
    Mix the yogurt, lemon juice, and garlic together in a bowl, then add the drained cucumber and mix together.
    Place in the fridge until you’re ready to serve.

To Serve

    To serve, heap the couscous in the center of a large platter and arrange the sosaties on top.
    You can serve the tzatziki either spooned over the top or in a bowl on the side.
