Ingredients

Watermelon and Coconut Granita:


2,3kg watermelon pieces, deseeded
1 can (400g) coconut cream
80 g (1/3 cup) Orange Blossom honey (replace with a plant-based syrup for Vegan-friendly granitas)
Juice of 1 lime

Spanspek and Orange blossom Honey Granita:


2 medium spanspek
250 ml (1 cup) water
80 g (1/3 cup) Orange Blossom honey
Juice of 1 lemon

Directions

Watermelon and Coconut Granita:


Place all ingredients into a blender and blend until smooth. Pour into a freezing tray and freeze for at least 4 hours or overnight stirring with a fork every 30 minutes.
Before serving loosen the ice crystals with a fork and serve with toasted coconut flakes and fresh fruit.

Spanspek and Orange blossom Honey Granita:


Place all ingredients into a blender and blend until smooth. Pour into a freezing tray and freeze for at least 4 hours or overnight stirring with a fork every 30 minutes.
Before serving loosen the ice crystals with a fork and serve with the watermelon granita and fresh fruit.
