Nectarine Caprese Salad

This twist on the classic tomato caprese salad is perfect for a light spring lunch. The sweet, fresh Nectarines pairs beautifully with the acidic Balsamic drizzle.

4 fresh nectarines

2 mozzarella balls

A handful of fresh basil leaves

A handful of almonds, roughly chopped

Olive oil

Balsamic vinegar


11. Slice the nectarines and mozarella into circles. Layer them on a board or plate, placing basil leaves inbetween.

22. Sprinkle with chopped almonds and drizzle with olive oil and balsamic vinegar.

Swop the Nectarine for a different stone fruit like Plums or Peaches.
