Sarah Grahams Papaya, Pineapple, Chilli and Sparkling Wine Granita

  • Yields: 6-8 Servings

Ingredients

1 small-medium papaya, peeled and chopped roughly

1 pineapple, sliced and chopped roughly

½ cup of mint leaves

Zest and juice of 1 lime

1 fresh chilli, de-seeded and finely chopped

½ cup Durbanville Hills sparkling wine

2 passion fruits, to stir in later after blitzing

Directions

1Mix together and place in a freezer-proof container until frozen. Scrape the mixture with a fork to make ice shavings every hour and repeat until you have fluffy frozen ice.

Remember, it needs 3-4 hours freezing time to set.
