Papaya Salsa Salad
A delish fruity side dish - best in the Spring time. Great to complement the smoky flavour of braaied meat or chicken.

1 - 2 breakfast papayas or paw paw, peeled and diced
½ red onion, chopped
1 – 2 red chillies, chopped
handful of coriander, chopped
juice and zest of 2 limes
1 cucumber, ribbons or sliced
handful of coconut flakes, toasted (optional)
Combine papaya, onion, chilli, coriander and lime.
Serve on cucumber and sprinkle with coconut flakes.
