A French-inspired summery pudding is sure to impress your friends, but it's as easy as making waffles. A great way to serve up summer fruit, served warm.

- Yields: Serves 6
1Preheat the oven to 180°C.
2Grease a shallow oven proof dish and arrange the peach slices in a fan all over the base.
3In a bowl, combine the flours and sugar.
4Slowly stir in the eggs, then the milk and the vanilla essence.
5Whisk to a smooth batter.
6Pour the batter into the dish, over the back of a spoon.
7Bake for 50 minutes or until a skewer inserted in the middle comes out clean.
8Dust with icing sugar before serving.
