Pesto Potato Salad

Boil, Drain & Basil to pair with your braai! Not only is this Pesto Potato Salad super easy, but it is budget-friendly and the perfect Summer side dish. Plus – it’s a little something for your vegetarian/plant-based guests.

Ingredients

  • 1 kg Food Lover’s baby potatoes
  • 125 ml (1/2 cup) basil pesto
  • Fresh basil leaves
  • Salt and black pepper, to taste

Directions

  1. Place a large pot with water on the stove with the baby potatoes
  2. Cover with a lid, then bring to a boil.
  3. Once boiling, remove the lid and cooked uncovered for about 25 minutes, or until cooked.
  4. Drain and allow to cool
  5. Mix the baby potatoes with the basil pesto, season to taste and garnish with fresh basil leaves.

Notes

*If you prefer another pesto – try a Rocket or other herb pesto to toss into this salad.
*For a little extra, add some feta
