Pumi Pea, Tomato and Salami Pasta





    1 cup frozen peas
    2 tbsp butter
    1 tbsp olive oil
    1 onion, finely chopped
    1 packet salami (ensure that it’s not spicy), chopped into smaller pieces
    1 jar of ready-made tomato sauce
    2 cups dried pasta of choice (we like penne)
    Shaved Parmesan cheese
    Fresh Italian herbs, chopped


    In a large pot, cook the pasta until tender.
    Drain and set aside ready to use.
    In a frying pan, heat the butter and oil and add the onion.
    Cook on a medium heat until soft and caramelized.
    Add the tomato sauce to the pan and heat.
    Add the peas at the same time so that they cook.
    Mix the sauce with the pasta and add the salami on top, as well as shaved Parmesan and fresh, chopped herbs.
