Refreshing Coconut Water Pink Lemonade

    3 cans PureLite Coconut Water
    1 cup (250ml) lemon juice
    1 cup (250ml) sliced strawberries sprinkled with 1 tbsp (15ml) xylitol (or sugar)
    ¼ cup (60ml) xylitol (or sugar)


    Puree strawberries and press through a fine mesh to remove all pulp.
    Warm about ½ cup coconut water and xylitol in microwave to dissolve the xylitol.
    Mix together all coconut water, lemon juice and pureed strawberry juice.
    Taste and adjust sweetness to your personal taste, if required. Place pink lemonade in
    fridge to get really cold. Serve with slices of lemon floating in the jug. Ice blocks
    made out of coconut water are also excellent for added refreshment and the
    sound of ice blocks tinkling in the jug screams summer!
