Sarah Graham’s Coconut Date Balls

These are healthy little bites that are great additions to lunch boxes or for on the go snacks.

Cooking Methods

    240 g cashew nuts, blitz first
    110 g desiccated coconut
    170 g raisins
    130 g dates, pitted and soaked
    20 g cashew nut butter
    1/2 tsp sea salt flakes


    Soak dates in hot water for 1 minute, then drain well.
    Add in all other ingredients to mixer, then add in drained dates, and blend until the mixture comes together in a ball and is a fairly smooth paste.
    Divide into portions and roll into balls, and refrigerate until set.
