Ingredients

5 large, ripe tomatoes quartered
2 red onions, quartered
5 garlic closed, skin on, squashed
5 sprigs of rosemary
2 Tbsp (30 ml) of olive oil
Salt and black pepper

Directions

Preheat the oven to 180°C.
Place all the ingredients in a baking dish and roast for 40 - 45 minutes.
Serve as a side dish or enjoy on crispy bruschetta or with pasta.
