Easy Sofrito Chicken

Prepare the waste-free frozen sofrito cubes and then all you will need is 5 ingredients to make this Sofrito Chicken recipe. A sublime version of your everyday chicken and rice.

All you need now is a glass of Sauvignon Blanc or dry Rosé.

Ingredients

5 Ingredients + Sofrito Cubes

  • 8 chicken pieces
  • 6-8 sofrito ice cubes (See recipe above)
  • 400ml (1 can) Food Lover’s Market Coconut Milk
  • 400g (1 can) La Belinda Chopped Tomatoes
  • 500g Food Lover’s Market Baby Potatoes, washed and halved
  • 1 green bell pepper, sliced
  • Salt and black pepper, to taste

Directions

  1. Heat a large pot with a dash of olive oil on a medium heat, brown the chicken pieces in batches until golden brown. Remove from the pot and set aside until needed.
  2. Add the sofrito cubes to the pot until defrosted, sauté the sofrito mixture for 2-3 minutes. Add the chicken back into the pot with the coconut milk, canned tomatoes, and baby potatoes.
  3. Allow to simmer for about 30 minutes with the lid on. Add the sliced bell peppers and simmer for another 10 minutes.
  4. Season to taste and serve the chicken with some rice.
