Sticky Caramel Mug Cake

NOTE: If you wish to make more than one mug cake, simply multiply the recipe by the amount you require.

A dessert for one, or for the family in your favourite mugs. You don’t need an electric mixer or oven to enjoy this decadent sticky caramel mug cake. This recipe is easy to whip together and is cooked in the microwave for just 2 minutes! The muscovado sugar in this recipe gives it that delicious, caramelized flavour.

If you’re making just one mug cake, you can mix it up in the mug. If you’re making for more, we recommend mixing it in a bowl and dividing the batter between the mugs.

Ingredients

For the Sauce:

  • 45ml (3 Tbsp) butter (or vegan margarine)
  • 30ml (2 Tbsp) sugar
  • 15ml (1 Tbsp) cream (*Vegan option: or coconut cream)
  • Pinch of salt

For the Mug Cake:

  • 30ml (2 Tbsp) dates, chopped
  • 30ml (2 Tbsp) orange juice, squeezed from a fresh orange
  • 7.5ml (1 ½ tsp) butter, softened (*or vegan margarine)
  • 15ml (1 Tbsp) muscovado sugar
  • 1 egg, beaten
  • Zest of 1/4 orange
  • 60ml (1/4 cup) flour (cake flour, gluten-free flour, or oat flour)
  • Pinch of baking powder
  • 15ml (1 Tbsp) pecan nuts, chopped
  • Pinch of salt

Directions

For the Sauce:

  1. Combine all ingredients in a small saucepan on a low/medium heat. Stir until dissolved and once dissolved, allow to boil for about 5 minutes. Set aside to cool slightly.
  2. For the Cake:

    1. Combine the dates and orange juice and place in the microwave for about 6 minutes on high. Allow to cool slightly and puree until smooth.
    2. Cream the butter and sugar together, add the egg and orange zest and mix well.
    3. Sift together the flour and baking powder. Combine the butter mixture with the flour and date puree and mix well.
    4. Add the pecan nuts and a pinch of salt.
    5. Spray your super cool Marvel Spiderman mug with non-stick food spray and divide the cake batter between the mugs to fill halfway. Next, divide the caramel sauce between the mugs and finish each mug with the rest of the cake batter.
    6. Microwave on high for about 2 minutes. Allow to cool for 1 minute and add some more chopped nuts and some spun sugar if you want to be fancy!

Notes

*This recipe has a higher sugar content, especially for kids. We recommend this as a treat.

SUBSTITUTIONS:

VEGAN: Substitute the butter for vegan-friendly margarine, or coconut oil. Substitute the cream for coconut cream. Replace the egg with a flax egg.

GLUTEN-FREE: Substitute the flour for a gluten-free flour alternative, Oat flour or Almond flour.
