Summer Ice Lollies

These summer Ice Lolly's are perfect for those hot sunny days when you have a few friends over or for the whole family. You can try any variation of fruits in season and keep in the freezer for up to 3 months. Such fun!


500 g Watermelon Flesh

300 g Honeydew Melon Flesh

1 Small Lime (only the juice of the lime)

100 ml Apple Juice


1Blend watermelon until smooth: strain, removing all pips and fibrous bits, and pout into 8 lolly moulds to come about a third of the way up the moulds

2Place in freezer until almost frozen solid.

3Repeat action, blending the green melon, lime juice and apple juice together. Strain through sieve and pour into lolly moulds, to fill the second third of the mould, inserting a stick if your moulds do not come with one attached to base.

4Allow this layer to freeze.

5Add last of the watermelon juice to fill last third of the mould and freeze untill totally solid, when you want to remove moulds, dip them into hot water for about 10 seconds to release the lollies.
