Sweetcorn Bread with Bacon and Cheddar Cheese

Home-cooked bread, warm and fresh out the oven is always a absolute winner! Great for braais, to start off a dinner party or a lunchtime sarmie.

  • Yields: Makes 1 loaf


625ml (2 ½ cups) cake flour

10ml (2 tsp) baking powder

15ml (1 Tbsp) Food Lover’s white sugar

5ml (1 tsp) salt

4 large eggs

125ml (½ cup) butter, melted

250ml (1 cup) buttermilk

250g Food Lover’s streaky bacon, diced

250ml (1 cup) Food Lover’s cheddar cheese, grated

410g tin Food Lover’s Signature sweetcorn kernels

200g tin Food Lover’s Signature cream-style sweetcorn


1Preheat the oven to 180°C

2Fry the chopped bacon in a pan over a high heat until crispy.

3Once cooked, set aside to drain off excess oil on a paper towel.

4In a mixing bowl; sift together all the dry ingredients.

5In a separate bowl, beat together the eggs, melted butter and buttermilk.

6Pour this mixture into the dry ingredients and mix well.

7Add the corn, creamed sweetcorn, bacon pieces and grated cheese.

8Gently fold these ingredients into the batter.

9Pour the mixture into a greased loaf tin.

10Bake for approx. 1 hour and 15 minutes until golden brown.

11Remove from the oven and allow it to cool before turning it out from the tin.
