Directions

Place the minced chicken, chopped spring onions, crushed garlic, chopped chilli, chopped coriander, paprika, lemon juice, soya sauce, sweet chilli sauce and 5-6 grinds of salt and black pepper into a bowl.
Using your hands, combine all the ingredients, then divide it equally into 4 portions. Shape each portion into a hamburger patty.
Heat a griddle pan on high and lightly brush the surface with oil.
Place the patties onto the griddle and cook for 3-5 minutes on each side, until they are cooked through.
To assemble the burgers, halve the hamburger rolls and butter each side, if desired.
Place a lettuce leaf on each bottom half of the roll, then a slice or two of tomato.
Spoon a tablespoon of mayo and a dash of sriracha on top of the tomatoes, then place the burger patty on top. Lastly, top with the lid of the bun and serve immediately.
