Ingredients

For the Flavoured Oil:

  • 30ml (2 Tbsp) olive oil
  • 1 sprig of rosemary or thyme
  • 5ml (1 tsp) chilli flakes
  • ½ clove of garlic, chopped finely

For the Nachos:

  • 4 large flour tortilla wraps
  • 250ml (1 cup) cheese, grated
  • 1 tomato, diced
  • ½ onion, diced
  • Coriander, chopped
  • 1 avocado, mashed
  • 15ml (1 Tbsp) mayo
  • Salt and black pepper, to taste

Directions

For the Flavoured Oil:

  1. Combine all ingredients and mix well.
  2. For the Nachos:

    1. Heat oven to 160°C.
    2. Cut the tortilla in triangle shapes. Place on an oven tray lined with baking paper, brush with the flavoured oil and bake for 5-7 minutes until brown and crispy. Remove and allow to cool.
    3. Scatter the cheese over the nacho chips and place in the oven until the cheese has melted. Finish with some diced tomato and onion salsa and serve with the mashed avocado mixed with mayo and coriander. Season to taste.
