Watermelon, feta and dill summer salad

This refreshing salad is the perfect accompaniment to any summer meal, or even a light lunch outdoors. The complimenting flavours are superb!

Ingredients

    80 g Food Lover’s Market Baby Spinach, Rocket and Basil
    200 g watermelon, cubed
    200 g FLM feta cheese
    Fresh dill, to taste

Dill and chilli dressing

    80 ml (1/3 cup) Food Lover’s Market Signature Olive Oil
    Zest and juice of 1 lemon
    10 ml (2 tsp) dill, roughly torn
    5 ml (1 tsp) chilli flakes
    Salt and pepper, to taste

Directions

    Arrange the mixed leaves on a serving platter and top with watermelon cubes, feta and dill.
    For the dressing place all ingredients in a glass jar, shake until emulsified and season to taste.
    Dress the salad with the salad dressing just before serving.
