A simple, delicious vegetarian meal to enjoy on the Weber this Summer, enjoyed as a main meal or a side for our meat-eaters.

8 pieces roasted red pepper about 5cm square

½ tsp chilli powder

For the filling

2 garlic cloves, crushed with ½ tsp coarse sea salt

2 tbsp extra-virgin olive oil

150g ricotta cheese

75g finely grated Parmesan cheese

Olive oil, for brushing
