30 ml (2 Tbsp) smooth cottage cheese
1 egg
1 scoop vanilla protein powder
125 ml (½ cup) You First Banting Bread Flour
125 ml (½ cup) almond milk
5 ml (1 tsp) baking powder
Pinch of salt
Prepare a waffle iron with non-stick cooking spray, then preheat.
In a mixing bowl, add the cottage cheese, egg and almond milk and whisk until smooth. Then fold in the remaining ingredients until incorporated.
Depending on the size of the waffle iron, add 2–3 Tbsp and cook for 4–6 minutes or until golden brown.
Repeat with the remaining batter. To serve, drizzle with honey and top with some fresh berries.
