For the Salad:
3 fennel bulbs, thinly sliced or shaved
200g Food Lover’s Market Streaky Bacon, cut into cubes
200g blue cheese, broken into chunks
60ml (1/4 cup) walnuts, roasted and roughly chopped
For the Dressing:
60ml (1/4 cup) lemon juice
125ml (1/2 cup) olive oil
Zest of 1 lemon
15ml (1 Tbsp) fennel, roughly chopped
Salt and pepper, to taste
For the Garlic Bread:
125ml (1/2 cup) butter, softened
3 cloves garlic, minced
15ml (1 Tbsp) parsley, finely chopped
Salt and pepper, to taste
Small baguette, sliced
For the Salad:
After thinly slicing or shaving your fennel bulbs, make sure to rub lemon juice onto the fennel to ensure it doesn’t brown.
In a frying pan over medium heat, cook the bacon until crispy.
On your serving dish of choice, place the shredded fennel bulbs as the base layer. Top with your crispy bacon followed by the blue cheese and walnuts.
For the Dressing:
In a small bowl or jar, combine all the ingredients and stir well. Drizzle over the top of your salad.
For the Garlic Bread:
In a medium sized bowl, combine the softened butter, garlic, parsley and seasoning and mix well.
Slice your baguette and lightly smear the garlic and herb butter on both sides of your slices.
In a frying pan over medium heat, toast the baguette slices until golden brown and crispy.
Serve with the fennel salad and enjoy!
