A combination of two retro desserts makes a delicious showstopper for a Christmas pudding. Make the most out of cherry season with a Black Forest Panettone trifle! Cherries, jelly, mascarpone, chocolate…bring it all on for this festive dessert. Black forest cake is loved by many, so we bring you a black forest trifle recipe. A trifle is packed with layers of goodness, so this will hit that sweet spot – especially when you feel like the best of all the worlds!

Chocolate Ganache
80g / 1 slab dark chocolate, melted
60 ml (1/4 cup) cream
Cherry Filling:
125 ml (1/2 cup) cherry jam
100 g Maraschino cherries
For the Mascarpone Filling:
125 ml (1/2 cup) mascarpone
80 ml (1/3 cup) icing sugar, sifted
For the rest of the trifle
400g Balocco Panettone
Chocolate trifle sponge
Rum or liqueur of choice
250 ml (1 cup) whipping cream
300 g Food Lover’s Cheeky Cherries, to garnish
1 packet red and green jelly each, made according to packet’s instructions

For the fillings:
For the Chocolate Ganache: Chop the chocolate and place in a glass bowl. Heat the cream to boiling point and pour over the chocolate. Stir gently until the chocolate is melted and you have a smooth, glossy chocolate ganache. Set aside until needed.
For the Cherry Filling: Combine the cherry jam and maraschino cherries. Set aside until needed.
For the Mascarpone Filling: Combine the mascarpone and icing sugar – do not overmix because the mascarpone will split. Refrigerate until needed.
To assemble the trifle:
Using a bread knife, slice the panettone into layers of about 2 cm thick.
Drizzle the rum or liqueur on the panettone and chocolate sponges.
Start layering the trifle by alternating between the panettone, chocolate sponge, cherry filling, mascarpone filling, the chocolate ganache and the jelly.
Whip the cream to soft peaks and top the trifle with the cream and finish of with Cheeky Cherries and an extra dusting of icing sugar – it is Christmas after all.
