Yellowtail is equally great cooked on the Braai or in the oven. Here we have taken the whole fish and dressed it in lemon and limes, drizzled it with a sweet and spicy Asian dressing, then baked it in the oven until juicy and tender.

1 Whole yellowtail, cleaned and scaled
1 lemon cut into slices
2 limes cut into slices
1 handful fresh coriander
Freshly ground salt and pepper
Asian dressing
1/2 cup soy sauce
1 tbsp olive oil
2 cloves garlic crushed
3 tbsp honey
1 tbsp fresh ginger
1 tbsp lemon juice
1 small chilli finely chopped
Directions
Place all the ingredients for the Asian dressing in a bowl and mix together well.
Place the cleaned and gutted yellowtail on a baking tray.
Score the fish on both sides, with 2 cuts. Using a basting brush, liberally coat the fish inside and out, with the Asian dressing.
Stuff the scored cuts and cavity of the yellowtail with the lemon slices, lime slices and fresh coriander. Pour the rest of the dressing over the fish.
Pour the rest of the dressing over the fish.
Season with freshly ground salt and pepper, then place the baking tray in a preheated 200 C oven for 25-30 mins, until the fish skin is crispy and the flesh, tender and opaque.
Serve immediately with lemon and lime wedges.
