2kg beef topside roast
Food Love’s Olive oil
Zest of 2 lemons
3 cloves garlic
5 sprigs rosemary
5 sprigs thyme
Salt and pepper
Preheat the oven to 200°C.
Place the beef roast into a roasting dish and drizzle with olive oil.
Place the lemon zest, garlic cloves, rosemary and thyme into pestle and mortar or blender and turn into a coarse rub.
Rub the roast well and place into the oven and roast for 45 – 50 minutes, or until cooked through.
Allow to rest for 10min before carving.
Serve with Yorkshire pudding and roast vegetables.
