400g Lamb Mince
400g Wagyu mince
Handfull of chopped coriander
Handfull of chopped mint
Hanfull of spring onion finely chopped
1 tsp Chilli flakes
1 tsp Garlic powder
1 tsp Kashmiri Masala
1 tsp Garam Masala
2 tsp Food Lovers’ Thai 7 spice
Black pepper
2 eggs
Grated clover gouda cheese for inside of patty
3 cup flour
2 ¼ tsp yeast
2 tbs sugar
¾ tbs melted butter
2 large eggs
1 tsp salt
1 cup warm milk
Onion seeds
Diced onion
2 x tomatoes
1 x red chillies
Chopped garlic
1 tsp Kashmiri masala
½ tsp crushed chilli
1 tsp sugar
Squeeze of lemon
Red cabbage
Carrot
Coriander
Spinach
Fresh mint
Fresh coriander
1 x garlic clove
Cumin seeds
1 x green chilli
2 tbs greek yogurt
1 tbs tangy mayo
1 tbs creamy mayo
squeeze of lemon
Salt to taste
Finely chop all ingredients add to mince meat.
Add spices.
Add egg to combine.
Shape and mould patties with cheese in the centre.
Fry for 5 mins on each side , allow to rest.
Activate the yeast in the bowl , combine warm milk , sugar and yeast. Allow to sit for about 5 – 10 min until frothy.
Slowly add in flour and salt to the stand mixer.
Combine the butter and yeast mixture.
Add the milk, butter & yeast mixture to flour . add beaten egg.
Mix on medium speed until a dough forms.
Mix for 5 – 7 minutes until the bowl shakes.
Place the dough in a greased bowl & cover with a wet cloth for 1st proofing.
After the 1st proof , shape the buns : punch down risen dough , divide into equal parts.
Shape each peace into a ball & place on baking sheet.
2nd rise cover shaped buns with a wet cloth for 15 – 20min until double in size.
Brush egg and water , add onion seeds.
Bake on 190 for 15 – 20min until brown.
Add olive oil & garlic & red chillies
Fry chopped tomato and onion
Add spices
Add sugar & lemon juice & reduce.
Finely chop the red cabbage , carrot , coriander and spinach.
Blend mint , coriander, cumin seeds and garlic clove, chillies and lemon.
Add Greek yogurt
Add mayo
Salt
