3 punnets cherry tomatoes
12 garlic cloves, peeled
100g sundried tomatoes with oil
5 sprigs fresh rosemary
375ml (1 ½ cups) Santagata Olive Oil
30ml (2 Tbsp) balsamic vinegar
10ml (2 tsp) chilli flakes
Salt & black pepper, to taste
Crusty bread, to serve
Directions
Preheat the oven to 160°C.
Place all ingredients in a deep oven dish.
Bake in the oven for about 1 hour to 1 hour 30 minutes or until the tomatoes have started to pop and the garlic is cooked.
Season with salt and black pepper.
Gently scoop out the tomato and garlic goodness and spread on crusty bread to serve.
