These shallow-fried crispy potatoes are a tasty and simple side dish that’s sure to be a crowd-pleaser. Made with par-cooked potatoes and B-well Canola Oil, they’re crispy on the outside and tender on the inside, with just the right amount of seasoning from Maldon salt. Serve with fresh greens for a pop of colour.

750 ml B-well Canola Oil
6-8 large potatoes, washed and par cooked
Maldon salt, to taste
Fresh greens, to garnish
Directions
Heat the canola oil in a large heavy bottom pan on a medium heat.
Cut the par cooked potatoes into 2/3 cm blocks. Shallow fry the potatoes for about 25 minutes or until browned and crispy. Stir them around every now and again.
Once browned and crispy, drain the potatoes on kitchen towel and season with Maldon salt, to taste.
Garnish with fresh greens and serve with your favourite mayo or dipping sauce.
