Indulge in the sweet and savoury flavours of our Homemade Ricotta, Fresh Fig and Thyme Tartlets. Made with creamy homemade ricotta, roasted walnuts, and fresh figs, these tartlets perfectly combine tangy and sweet. The flaky puff pastry and thyme add an extra layer of depth to this delectable treat.

Directions
For the Homemade Ricotta:
In a medium size saucepan, heat the milk over medium heat until simmering. Be careful not to let the milk boil and bubble over.
Once gently simmering, add the vinegar and gently stir until the milk starts to curdle.
Strain the mixture through a muslin cloth and allow to cool.
For non-wastage, keep the leftover whey from the ricotta to add to soups or broths for extra creaminess. It can also be used instead of milk when baking.
For the Tartlets:
Preheat your oven to 180°C. Line a baking tray with parchment paper and spray it with non-stick spray.
Cut the puff pastry sheet into 10cm x 6cm rectangles and place them on the prepared tray.
Place another layer of parchment paper over the pastry and another tray on top to ensure the pastry doesn’t puff too much when baking.
Bake for 15-20 minutes or until golden brown.
In a medium size bowl, combine the ricotta, garlic, thyme and seasoning and mix until well combined.
Spoon the ricotta mixture on top of the puff pastry and finish it off with two or three fig quarters. Sprinkle with the walnuts and drizzle some honey over the top. Enjoy!
