Mieliepap, also known as maize meal, is a quintessential South African breakfast. Mieliepap can either be made into a pap porridge for breakfast, or it can be made into pap or ‘krummelpap’ served with braaied meat and tomato relish. For many South Africans, this is a childhood classic, but we tweaked it with a bit of luscious coconut cream and more nutritious ingredients for a balanced breakfast, like Macadamia nut butter, chia seeds, coconut flakes, and fresh seasonal fruits.
In a medium pot, add the maize meal and milk or water, bring to a boil and cook for 20-25 minutes.
Add the coconut cream, cinnamon, honey and salt and stir to combine.
To Assemble:
Dish the mieliepap into your bowls and finish with the berries, coconut flakes, chia seeds, cocoa nibs and macadamia butter.
Drizzle with honey, add mint and serve.
Additional Notes
This porridge can also be served savory, like congee with chopped spring onions and sliced boiled eggs. You can also serve this with bacon and maple syrup or honey for a bit of both Worlds.
