A perfect weekend bake; soft, fruity sweet, and delicious. These berry muffins are a great, healthy on-the-go breakfast. These can also be vegan or dairy-free by using plant-based milk of choice, plus they can be gluten-free and refined sugar-free.

125ml (½ cup) Oat flour
125ml (½ cup) You First Almond flour
5ml (1 tsp) baking powder
90ml (6 Tbsp) coconut sugar or 15ml (1 Tbsp) honey
Pinch of Salt
125ml (½ cup) milk of choice
60ml (1/4 cup) coconut oil, melted
5ml (1 tsp) vanilla extract
180ml (¾ cup) frozen blueberries or mixed berries
Directions
Combine all ingredients into a mixing bowl and mix well with a fork. Place in a muffin pan and bake at 180°C for about 12-15 minutes or until cooked.
Additional Notes
Can I substitute the almond or oat flour?
Of course, you can use regular flour, simply substitute the almond and oat flour for 250ml (1 cup) regular cake flour. You can also grind up oats and almonds to make the flour.
