An OG; Chicken mayo is an absolute classic! This chicken mayonnaise recipe has the best chicken mayo ratio and uses succulent roast chicken for the filling mix, with the fresh, famous Food Lover’s paninis, grilled to perfection! A touch of mustard and black pepper are a must in a chicken mayo sarmie.
What about the skin? You can either include it, or you can re-crisp the skin and add it into the sarmie for some crunch.

1 whole fresh chicken or 4 cups of cooked and shredded chicken (leftover roast chicken)
2 whole garlic cloves
20 ml (4 tsp) Food Lover’s Blended Seed and Extra Virgin Olive oil
250 ml (1 cup) B-Well Mayonnaise or Food Lover’s Canola Mayonnaise
Herbs of your choice, chopped finely
15 ml (1 Tbsp) wholegrain mustard
Zest of 1 lemon
15 ml (1 Tbsp) lemon juice
Salt and black pepper, to taste
6 Food Lover’s Paninis
30 ml (2 Tbsp) butter, softened
Directions
Preheat the oven to 180°C. Place the chicken and garlic in a roasting tray, drizzle with oil and season to taste.
Roast for about 45 minutes or until golden and cooked. Set aside to cool. When completely cooled, shred the chicken and squeeze the garlic out of its skin and press it fine.
Set aside until needed. The roasting gives the chicken a lovely charred flavour.
Combine the chicken with the mayo, herbs, mustard, lemon zest and juice. Mix well and season to taste with salt and black pepper.
Cut the paninis in half and spread both the outer sides with butter. Place the chicken mayo filling inside the paninis and close each sandwich.
Heat a griddle pan or a toastie machine on a high heat and toast the paninis for about 3-4 minutes or until golden brown.

Roast chicken adds more flavours, plus you can re-crisp the skin for some extra crunch in your sandwich.
