1 onion, finely diced
15 ml (1 Tbsp) Food Lover’s Blended Seed & Extra Virgin Olive Oil
15 ml (1 Tbsp) Worcestershire sauce
650g bag of Food Lover’s Potjiekos Mix
5 ml (1 tsp) Food Lover’s Vegetable Spice
750 ml (3 cups) beef stock
250 ml (1 cup) fresh cream
50g Onion soup powder
350g Food Lover’s sliced biltong
Handful of Food Lover’s fresh parsley, finely chopped
Bring a cast iron pot or potjie to a medium heat. Add the oil and onion and allow to sauté for 3-4 minutes.
Whisk together the cream and onion powder until just combined.
Add the Worcestershire sauce to the onions and then add the potjiekos mix. Season with the vegetable spice, cover the vegetables with the beef stock and cook for 20 minutes. Once the vegetables have cooked through, add the cream mixture and allow to thicken for about 3-5 minutes. Once the sauce has thickened add the biltong and stir through.
Season with some fresh black pepper and add some fresh parsley before serving along with some steamed rice or any side of your choice.
