Mieliepap, also known as maize meal, is a South African staple. Mieliepap can either be made into a pap porridge for breakfast, or it can be made into pap or ‘krummelpap’ served with braaied meat and tomato relish. This savoury mielie pap bowl recipe turns the traditional boerewors and pap into a beautiful, balanced bowl of deliciousness packed with South African flavours.

For the Mieliepap:
250ml (1 cup) maize meal / pap
1L (4 cups) milk
Salt and pepper to taste
For the Bowl
1 corn on the cob (Mielie)
15ml (1 Tbsp) olive oil
2 onions, finely sliced
200g boerewors
80ml (1/3 cup) mature cheddar cheese
Fresh micro herbs (to garnish)
Directions
For the Mieliepap:
In a medium pot, add the maize meal and milk or water, bring to a boil and cook for 20-25 minutes. Season to taste
For the Relish:
Place all the ingredients in a medium pot, bring to a boil and simmer for 15 minutes. Set aside.
For the Boerewors & Charred Mielie – Pan-Fried:
For the charred corn, boil the corn for 5 minutes, remove and char in a pan until it is the desired colour. Remove the corn kernels and add to the mieliepap.
In a pan, preheat the olive oil and add the sliced onion. Cook the onions on a low heat for 15 minutes, stirring regularly. Heat a medium pan and grill the boerewors for 5 minutes on each side. Cut into slices.
OR Braai’d Boerewors & Mielie
Braai-Method: Braai the Mielie and Boerewors until charred and cooked through. Remove the corn kernels from the Mielie. Slice the Boerewors.
Assemble your bowl:
Dish the pap into bowls and top with the relish, cheese, corn, boerewors, caramelized onions and micro herbs
