Boerewors
700 g Food Lovers Market Super Rugby boerewors
6 fresh hot dog rolls
1 tbsp feta cheese crumbled
Caramelized Onions
3 large onions, halved and finely sliced
1 garlic clove crushed
1 1/2 tbsp sugar
1 tbsp butter
1/2 tbsp fresh thyme leaves
Balsamic Cherry Tomatoes
500 g cherry tomatoes halved
1 clove garlic crushed
2 tbsp extra virgin olive oil
2 tbsp balsamic reduction
1 tsp fresh thyme leaves
Freshly ground salt and pepper
Balsamic Cherry Tomatoes
Toss the halved cherry tomatoes, crushed garlic, thyme leaves, extra virgin olive oil and balsamic reduction together on a baking tray.
Spread the tomatoes across the tray and sprinkle with a few grinds of freshly ground salt and pepper.
Roast in a preheated, 180 degree C oven, for about 30 minutes or until the tomatoes are soft and juicy.
Remove them from the oven and set aside.
Caramelized Onions
While the tomatoes are roasting in the oven, heat the butter in a pan.
Add the crushed garlic, sliced onions, sugar and thyme.
Stir the ingredients around, making sure that the onions are well coated with the butter.
Place a lid on the pan and cook the onions, on a moderate heat, for 20-30mins, stirring them around intermittently.
The onions should be soft and golden brown in colour when cooked.
Remove from the heat and set aside.
Boerewors
To cook the boerewors , place in a heated, lightly oiled griddle pan, in a coil shape. Cook for approx 8-10 minutes on each side (depending on the thickness of your boerewors).
Remove the boerewors from the pan and cut into 6 portions.
Assembling
Cut the hotdog rolls, lengthways, down the center of each roll, making sure not to cut them all the way through.
Fill with a layer of caramelised onions and balsamic cherry tomatoes, then nestle the boerewors into the relish and sprinkle with the crumbled feta cheese.
Serve immediately while warm.
