We all love a butternut fritter, with the addition of cheese these little fritter tots are a crisp, delicious bite-size snack as a side, starter, or to serve in a platter.
This recipe makes 6 – 8 fritters.

500ml (2 cups) butternut mash
¼ onion, chopped finely
30ml (2 Tbsp) parsley, chopped
60ml (1/4 cup) almond flour
Pinch of cayenne pepper
5ml (1 tsp) paprika
60ml (1/4 cup) cheddar cheese, grated
Flour, for dusting
Oil for shallow frying
Directions
Combine all ingredients for the tater tots and roll the mixture into 4-5cm balls.
Dust all the tater tot balls in flour and shake off the excess.
Shallow fry the tater tots over a medium heat for about 4-5 minutes or until golden and crispy.
