Butternut & Turmeric Pici Pasta

That TikTok Spinach Pici Pasta recipe has made pici pasta famous, but it’s always existed (WAY back to Etruscan times!), it’s just been made a trend, as TikTok does. Pici, or Pinci, (pronounced ‘Peechy’)), is a thick, hand-rolled pasta, like fat spaghetti. It originates in the province of Siena in Tuscany. It’s originally just made of flour and water. Like most trends, we need to try it ourselves, but our recipe developer went with turmeric and butternut pici pasta, paired with beautiful garlic and herb butter sauce.

How do I make green spinach pici pasta?

The TikTok trending spinach pici pasta is a blend of 120g baby spinach and 180g flour, instead of the butternut and turmeric used in this recipe. Jamie Oliver has a recipe for you. 

Do I have to add turmeric?

No you don’t, you can add other spices or herbs you like. Perhaps you want to try paprika instead of turmeric.

Top Pici Pasta Tips:

    Let the dough rest for at least 30 minutes so it’ll be softer and easier to work with. Don’t use flour to roll out the Pici.

Can I make Pici in advance?

Yes, you can either make the dough up to 24 hours in advance or you can roll out the pici and store them on a baking tray dusted with plenty of semolina. Keep them covered with a clean kitchen towel.

Can I freeze the dough?
