Only in South Africa will you find a braai pie – we love pie and we love to braai – enter; The Braai Pie! Mushrooms, bacon and lots of cheese come together to make this favourite, decadent braai time dish. But watch out, you will need a seasonable braai master to get the pastry just right on the open coals.
This braai pie, Carla’s braai pie, is even more special as we celebrate our South African heritage by bringing you our families’ famous favourites to your table. Through an internal competition, we collected some winning heritage recipes to share with you.

For the Filling:
1 onion, chopped
1 red bell pepper, deseeded and chopped
2 cloves of garlic, minced
250g mushrooms of your choice, chopped
10 ml (2 tsp) paprika
200 g Food Lover’s Streaky Bacon, chopped
1x 200 g pack of spinach
Handful Italian parsley, chopped
To assemble the Braai Pie:
2 rolls of puff pastry, thawed
50 g (1 pack) tomato paste
45 ml (3 Tbsp) sweet chilli sauce
500 ml (2 cups) grated gouda cheese
2 wheels of feta cheese, crumbled
Salt and black pepper, to taste
Directions
For the Filling:
Heat a frying pan with a dash of olive oil on a medium heat, fry the onions and bell pepper for about 5-6 minutes while stirring
Add the garlic, mushrooms, paprika and bacon, sauté until the bacon is cooked. Add the spinach and parsley for a few minutes, turn the heat off, season to taste and allow the mixture to cool down completely.
To assemble the Braai Pie:
Use two, 40 x 30 cm puff pastry sheets and place them on your work surface.
Mix the tomato paste and sweet chilli sauce and spread out onto the pastry, followed by the cooked filling. Leave roughly 2 cm of pastry empty. Sprinkle with cheese and feta, season to taste.
Place the second roll of pastry on top and pinch to close all the sides, cover the top of the pie with foil and close all the ends of the foil.
When coals are ready (not too hot), place the pie onto a grid and braai until pastry is cooked, for about 30-35 minutes while turning regularly, braai the pie until pastry is nice and crispy.
Let the braai pie cool down and cut into pieces and enjoy!
Note: You can add more meat, even left over braai meat works well. Add and swop out the ingredients to your taste.
