We experimented in the kitchen again, our love for sweet fritters and carrot cake got combined this time. These carrot cake fritters will go down well as brunch or dessert on the weekend…after all, the best time to eat ‘cake’ is for breakfast right?! PLUS, they a sugar-free, and can be made gluten-free if you like. A mixture of carrots, eggs, oat flour, milk and spices – you need to try these – they may just be your new favourite instead of pancakes!
This recipe makes 6 – 8 Fritters.

2 carrots, peeled and grated
¼ tsp ginger, grated
125ml (1/2 cup) milk
10ml (2 tsp) egg whites
125ml (1/2 cup) oats, ground into a flour
125ml (1/2 cup) flour
2.5ml (1/2 tsp) cinnamon
Pinch of nutmeg
5ml (1 tsp) baking powder
2.5ml (1/2 tsp) baking soda
30ml (2 Tbsp) yoghurt
2.5ml (1/2 tsp) apple cider vinegar
Directions
Combine all ingredients and mix well.
Heat a large frying pan on a medium heat with a dash of olive oil or butter.
Place tablespoon-sized amounts of the carrot mixture into the pan and fry for about 3-5 minutes per side or until golden and cooked.
